Green tea from a place that almost never makes it onto a tea list: Bikou, in Wen County, Gansu — about as far northwest as Chinese tea growing gets, right at the crop's climatic edge. The tea gardens sit at 600-1560m along the Baishui River, an area also known as giant panda habitat, which says something about how undisturbed the growing environment actually is.

Picked in spring as one bud with two leaves and pan-fired in the maofeng style, it leans toward a gentle, bean-like aroma rather than the more vegetal, grassy notes typical of lower-altitude greens — brew it the same way you would any delicate green: a glass or porcelain vessel, water well under boiling. This is also a tea with a real story behind it: Wen County now has close to 80,000 mu of tea gardens, and the industry supports thousands of farming households across formerly low-income villages in the area — tea as the actual local economy, not a marketing line.
